Festival Culinaire Bernard Loiseau 2014

 

Constance culinary festival Now into its 9th year, the much-anticipated Festival Culinaire Bernard Loiseau takes place at Constance Belle Mare Plage from 29 March to 6 April. The premise of the festival is to pair six up-and-coming Michelin starred chefs from Europe with six ‘Island Chefs’ from Constance Hotels & Resorts in Mauritius, Seychelles and the Maldives, in a competition to design and create two traditional recipes using only locally available ingredients.

These ingredients are chosen and communicated in advance, and the teams must use their skills and creativity to develop two courses for seven people which this year comprises a starter with local vegetables, and a main dish with duck breast.

Teams select their own fresh produce from the market at Port Louis, and all spices must be crushed using a traditional roche-cari - a stone roll grinder used on a roughly-polished slab of cut stone.

The contest

The festival – launched to commemorate the life of chef Bernard Loiseau – is a joint venture between Constance Hotels & Resorts and the Relais Bernard Loiseau, with the panel of judges headed by the vice president of Relais et Châteaux, Mrs Dominique Loiseau.

On the day of the competition itself, the final dishes must be prepared by the Island Chefs only. Also closely monitored is the transfer of skills and knowledge from one chef to the other, a major objective of the whole event.

Culinary fun for Constance guests

During the week of the competition, guests of Constance Belle Mare Plage and Constance Le Prince Maurice can enjoy a number of special events, including cooking classes and demonstrations in addition to some mouthwatering meals.
