Mauritian Style Monkfish skewers
If you’re looking for a delicious Summer dish with bags of flavour then this recipe will leave all of your friends smiling. Brought to us by one of our favourite chefs, Selina Periampillai of Taste Mauritius, it’s a great plate to serve on a sunny day.
Ingredients (Serves 2/3)
300g Monkfish or Firm white fish (cut into chunks)
Butter, Ghee or Olive Oil to baste (1tbsp melted)
Wooden Skewers soaked in water or Stainless Steel/Metal skewers
Marinade:
1tsp garlic/ginger paste
1 1/2 tbsp Mauritian Curry Powder OR
1tsp ground cumin
1tsp ground coriander
1/2tsp cinnamon
1/2tsp turmeric
chilli powder to taste
1 heaped tbsp Greek Yoghurt
squeeze of lemon juice
Pinch of salt
Method:
Add the monkfish to a mixing bowl along with the lemon juice and salt. Mix all the other marinade ingredients to a smooth paste and add the monkfish pieces into the marinade, ensuring all pieces are coated well.
Cover with clingfilm and place in the fridge for 15-20 minutes to marinade.
Preheat the grill to a medium to high setting. Skewer the fish onto the soaked wooden or metal skewers. Pat the extra marinade over the pieces and place under the grill. Grill for 10 minutes or until just done, baste the fish half way through cooking to keep moist and turn over.
Squeeze fresh lemon juice over the cooked fish and serve with a cooling cucumber, tomato and chilli salad.
